Exercising and eating healthy are 2 things that I have some control over in my quest to stay healthy. I have a Vivo Fit that I love.  It counts my steps and lets me know how much I have slept. It helps me stay focused on moving and just walking around.

My recipes are coming under scrutiny now that I’m past chemo when I couldn’t eat much and everything tasted like aluminum foil. I’m getting my appetite back but my standards have changed.  This recipe has no white flour, little sugar, and no fat but peanut butter.

My family loves these cookies that I found online. I made a few adaptations to it for my families’ tastes and what I had in my pantry.

Here’s my recipe:

2/3 c. Old Fashioned Oats

1 T. Ground flaxseed

1 t. baking soda

Mix together and set aside. 

1 large egg, beaten

1 c. Peanut butter, natural

1 t. Vanilla

6 T. Brown sugar (or 2 T of Truvia brown sugar and 3 T of brown sugar)

Mix together. Add oat mixture.

1/3 c. Chocolate chips, semi sweet

1/4 c. Chocolate chips, sugar free

Fold in chocolate chips.

Chill dough for 30 minutes in the refrigerator or 15 minutes in the freezer. Use 2 large spoons or cookie scoop to form a ball and place on lined cookie sheet.

Bake at 350 for 10 minutes. Cool 10 minutes then transfer to cooling rack.

Makes about 20 cookies.

These are really rich so it won’t take but one or two to satisfy your sweet tooth.
