We had a paint party this week. I had never been to one before but it was a lot of fun. 

This is where my painting found a home for now. 


Everyone brought snacks and we had fun painting, talking, and eating. My friend, Brenda, made a delicious spinach dip. She shared her recipe with me and I tweaked it some and made it for my family today.  I have lots of greens from my Foodshed Farms share and get another box tomorrow. So in an effort to use up lots of fresh greens, here is my recipe.



5 cups of fresh, chopped greens (kale, bok Choy, Swiss chard, arugula, spinach)

1 cup olive oil mayonnaise 

3 ounces of Neufchâtel cheese

1/2 small onion, minced

1 clove garlic, minced

1 cup + 2 T shredded Parmesan cheese

1/8 t pepper 

1/4 t paprika

Mix all together and spread in baking dish. 


Bake at 350 degrees for 25 minutes. 


We doubled the above recipe because we are drowning in fresh greens but I couldn’t bring myself to compose a recipe that calls for 2 cups of mayo. If I didn’t have so many greens, I would have made a smaller dish. You could also add chicken to this recipe. 

We ate this with multigrain tortilla chips and crackers.
